Macadamia Nut Shortbread Cookies
  • 1/2 cup salted butter, softened
  • 3 tbsp powdered sugar
  • 3 tbsp coconut sugar (or sugar in the raw)
  • 1 tsp vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/3 macadamia nuts, finely crushed
  • 1/3 cup mini chocolate chips
  • Line cookie sheet with parchment paper
  • Preheat oven to 350°F
  • Use a food processor to crush macadamia nuts into small pieces
  • Mix butter and sugar with mixer. Add the flour and vanilla until combined. Hand stir in chocolate and macadamia nuts.
  • Make tablespoon size balls and set on prepared cookie sheet. Chill cookies in refrigerator for
  • Bake chilled cookies for 12 minutes. The edges/tops will start to brown
